Chef's Tasting Table Day 6 // Beet Hummus + Rainbow Carrots



A humble beet...


Gets roasted!








We all got BEET red for Valentine's Day!

Meet Jeff and Jen Miller, the owners and farmers of the beautiful Prairie Wind Family Farms located just 8 miles from West Oak School! They taught the kids fun facts about beets, watermelon radishes and rainbow carrots, three vegetables all grown and sold on their farm.

Skoop and the Chef Ann Foundation Organization teamed up to launch the Project Produce Grant Program which awarded Diamond Lake District 76's West Oak School $2500 in funds to help give all students access to more fresh produce and food education during the school day.










In addition to Jen and Jeff, Mary and Executive Chef Silvio from Preferred Meals joined us and spoke to the kids. Chef Silvio got the students thinking about the ratio of vegetables and meat in our grocery stores, in our diets and on our plates:
  • There is so much more vegetable variety than meat at the grocery store
  • Vegetables detoxify our bodies and give us essential nutrients and antioxidants 
  • You can eat both raw and cooked vegetables (meat mostly cooked)
  • Vegetables are much less expensive than meat
  • Preparation methods are endless with vegetables
  • Vegetables include essential proteins too
It was so FUN hearing Jen, Jeff and Chef Silvio speak to the students about their food passions, farming, cooking, and eating vegetables! Most especially sharing their knowledge of beets, watermelon radishes and rainbow carrots - three vegetables that most students had never seen or tasted before. Thank you SO much for volunteering your time to be with me in the lunchroom, the kids LOVED meeting and interacting with all of you. 


The kids were pretty enthralled watching the beet hummus come together in the food processor.
And the ruby red hummus certainly stretched a lot of students out of their food comfort zone. 

When's the last time you had anything that RED, which was NOT a fruit or colored by Red #40? 

Creamy Beet Hummus
Inspired by this recipe

1 small beet
1 can chickpeas/garbanzo beans drained (reserve some juice!)
Zest from 1/2 a lemon
Juice from 1/2 a lemon
1/2 tsp sea salt
1 large garlic clove (or two small ones)
1/4 cup chickpea juice
1/4 cup extra virgin olive oil or avocado oil

Combine first six ingredients into a food processor and blend. While blending pour in oil and reserved chickpea juice. Stop after 30 seconds and scrape the sides. Blend for another 30 seconds or until super smooth and creamy. 

Roasted Beet Salad with Citrus and Honey

4-5 roasted beets diced
Zest + juice from 1/2 orange
Zest + juice from 1/2 lemon
3-4 Tbsp honey
1/2 tsp sea salt
3-4 Tbsp extra virgin olive oil or avocado oil

Mix all ingredients in a large bowl and serve.

Join the #RealSchoolFood Campaign!


We want YOU! 

The Chef Ann Foundation is officially declaring October the month of Real School Food, and I am pumped to join the campaign for it's second year! They have lots of fun events and activities planned to get the word out so stay tuned in to Chef Ann's Instagram, Facebook and Twitter pages! 

Why do we need a whole month dedicated to raising awareness about real school food? 

It’s ridiculously simple.

"Childhood obesity and diet-related disease are crippling our children’s futures. Over 30 million children eat school lunch every day, and many of their meals are processed, heat-and-serve items loaded with artificial un-pronounceables and mystery ingredients that are contributing to the problem.  Our kids deserve better, and that means real school food, cooked with healthy, nourishing ingredients." - Chef Ann Foundation

This quote hits home for me BIG time.

4.5 years ago I swerved my family swagger van onto the real food highway. I hit my trigger point with concerns about my daughter's social, emotional and academic performance at school. Abbie was performing a full year behind grade level in 1st grade and she could not pay attention, sit still, follow two step directions or get along with her friends in school. I was ready to try anything, have no regrets, so I tried real food first. I kicked out the fake food - preservatives, artificial colors and added sugar. I also kicked out gluten and dairy for awhile. After two weeks of eating more clean, real food, she was symptom free (I know, I still can't believe it) and it changed the course of her life, my life and our family's life forever. Let me be clearIt's not about perfection for us. We eat out and we certainly eat some processed food. Our goal is simple: 80% real food to 20% "whatever" food. Cuz I really love to eat my "whatever" food too. 

The incredible connection between our gut-brain lights up my world like a glorious sunrise and I geek out about the microbiome pretty much everyday. New research is emerging at a furious pace and I try to keep up with "What's New in ADHD" as this information impacts my family's health no matter how well now my children are now functioning in school.

Everyone EATS and it's time we inspire the guts + minds which gather everyday in the biggest restaurants in town - SCHOOL CAFETERIAS! 

Get involved! Here are some ways you can add your support:

1. Snap a selfie with a sign #realschoolfood.
2. Post the selfie to your social media platforms (Instagram, Twitter, Facebook) and use the #realschoolfood hashtag in your comment (Here's a good one to copy: "30 million kids eat school lunch every day. It's time we served them #realschoolfood. Join the campaign now: realschoolfood.org") 
**Don't forget to make your Facebook post public so that the Chef Ann Foundation can track the hashtag and count the post towards a matching donation!**
3. You can even make your picture your banner or profile pic for the entire month of October (if you're a food education goober like me)!
4. For every person who posts using #realschoolfood from now until the end of October, $1 will be donated towards healthy school food programming for kids across the country. This is an incredible opportunity for Americans to make school food reform a reality, thanks to the generosity of the foundation's sponsors (click here to check em all out!).

ACES Day - A Perfect Day for Food Education + Exercise


Our planning is complete!

On Wednesday, May 4th, our District 76 Wellness team is partnering with the Chicago Pilot Light Chefs organization to bring the common core aligned food education lesson, "Tacos Al Pastor", to West Oak Middle School on ACES Day (All Children Exercise Simultaneously). 

Here's how our Wellness Committee decided to weave Food Education into ACES day: 

1. Half of the student body will participate in a classroom Pilot Light lesson while the other half will join me in the gym for my “No Guts No Glory” presentation. Ambassador Sara Lohrman, students from her Stevenson High School Food Revolution Day Club and Chef Robert Collins will be joining me on stage to inspire and engage with West Oak students and staff. **Any teacher or school administrator who is interested in bringing Pilot Light to their school can access this special lesson online: Pilot Light Chef's - Reset the Table Curriculum. (In case you don't have time to review the materials now, take the time to watch this incredible video: The Whole World is a Taco.)

2. During lunch, all West Oak students will be inspired to "Trick Out Your Tacos" with our freshly prepared samples and a special Preferred Meals’ lunch. Our school lunch provider has aligned their lunch menu to Pilot Light's food education curriculum to include an all beef taco and hotdog lunch with an expanded condiment bar including tomatoes, lettuce, onions and jalapeƱos. A perfect pairing to our live chef's demonstration and tasting table! The SHS students will prepare Jamie’s Oliver's Simple Hummus and my special cilantro pesto; Chef Rob will demonstrate his “Sweet Potato Hummus.” The Simple Hummus is one of 10 special "Cook for your Life" recipes as part of Jamie Oliver's new Food Revolution Day Campaign being launched May 9th on www.jamiesfoodrevolutionday.com. The students will walk away with all three recipes to cook at home with their families!

I cannot wait to share pictures and highlights from this special day next week! I am so grateful for the collaborative efforts between our Wellness Committee, Pilot Light Chefs, Preferred Meals, SHS, Chef Rob and our amazing school administrators. This could not have happened without the positive synergy we have been building together over the past few years. I have to give a special shout out to Sue Kruckman (school nurse), Chris Willeford (school principle) and Tracy Zeman (Student Services Coordinator). Sue is our Wellness Committee Chair, West Oak nurse and a true partner in crime! I will never forget the meeting when Chris said, "Let's do this on ACES Day!" This could NOT have been accomplished without their hard work, support and mutual passion for good health and well being. I am so grateful to be a part of our D76 Wellness Team!


Speaking of TACOS... Last night, my family table "tricked out" ours with watercress and green leaf lettuce!
