Set the Table 2017 | Week 44


Simple Potato Soup

Chicken or Vege Stock
Organic potatoes
White balsamic vinegar
Sea Salt & freshly ground pepper
Organic bacon (optional)
Irish cheddar (optional)

Fill half of your soup pot with stock. Eyeball how many potatoes will fit in the pot and still be covered with liquid. Rinse and peel your potatoes. Quarter the potatoes. Add them to the stock. Bring to a boil and simmer until potatoes are cooked through (You should be able to pierce the potato chunks with a fork with no problem, like a pillow!). Using a hand held emulsion blender, blend until silky smooth (or transfer to a high speed blender). Add sea salt and pepper to taste. How do you know how much to add? Take a spoonful of unseasoned soup and taste it. Then take another spoonful of soup and add a pinch of salt to it. What a difference right? Season the soup pot with generous palmfuls of salt until you get it to taste like that original, perfectly salted spoonful. As for the white balsamic vinegar, add a tsp or two at a time and stir in. Taste. When you get it right it'll just POP in your mouth. Trust me, go for it. (I added between 2 and 3 Tbsp's I think.) A little acid will surely brighten up the soup. Hey, it got people like my Mom (who hates potato soup) to fall in love with this simple comfort food! MAJOR SCORE!

    I turned the potato soup into a cheese sauce for our Halloween Taco Tuesday. I sort of forgot to soak the cashews (damn!) but had plenty of potato soup leftovers. I had made a vegan cheese sauce before from potatoes and carrots so I figured this little "change up" would work out just fine.

    To my leftover potato soup, I added lemon juice, cayenne pepper and nutritional yeast from last week's Raw Cashew Cheese recipe to taste.

    Not to shabby my pretties... not too shabby!


    I was gone from my family table two days this week for a downstate trip to the Action for Healthy Kids IA/IL School Wellness Conference. Here was the first slide of our presentation - The West Oak School Chef's Tasting Table adventures with Sue Kruckman (School Nurse and Wellness Committee member).

    We begin this year's Chef's Tasting Table series on Thursday at West Oak!




    Around 20 family tables of 20 people wined, dined and raised their paddles for Pilot Light Chefs on Friday. I am an Advisory Board Member for this incredible Chicago food education organization and I was honored to volunteer as Table Host for Chef Paul Kahan (Pilot Light Chefs Founder, One Off Hospitality) and Chef Ryan Pfeiffer (Chef De Cuisine, Blackbird).  

    It was an incredible, awe inspiring night of food and wine. Our fundraising goal was obliterated (I cannot WAIT for the final numbers...) All proceeds will directly fund and support teacher institutes, common core aligned food ed lessons, and portable kitchen units that are reimagining curriculum around food in the classroom. 

    Good food education is magic. 

    And I believe 

    in

    Magic.

    Set the Table 2017 | Week 39


    5 Ingredient Breakfast Cookies in less than 20 minutes
    Inspired by my friend Christina + a recipe on Pinterest

    1 cup quick cooking oats
    1 handful mini chocolate chips (I love this brand)
    2 large ripe bananas
    a pinch of salt
    some shakes of cinnamon

    Preheat oven to 350. I think the only ingredient I measure here is the oats. Mash up the bananas in a medium sized bowl. Add everything else and mix thoroughly. It's easy to use a 1-inch ice cream scoop to portion out the cookies onto a baking sheet. Bake for 15 minutes. Makes 12 cookies. These cookies are my kids favorite and I leave them out for snack when they get home (IF there are any left after breakfast!) Christina likes to add shredded apples/pears, nuts, raisins, nutmeg to hers and its SOOOO good. Or how about some pumpkin spice to make it nice? Be creative, ask your kids what they want in their cookies and make them your own!

    Yesterday, I went solo to a Fulton Market Harvest Festival brunch benefitting the Houston Food Bank and shared a family table with new friends who saved a spot for me! Thank you Nicole and Doug!! We had a BALL. Our table was full of laughter and plenty of GOOD food.


    It was super fun talking to James waiting for the one and only Aaron Sanchez! I loved this Huitlacoche crepe with roasted mushrooms, epazote and queso eaxaca. Simply amazeballs:


    I was so honored to meet the incredible Chef John Besh and his wife Jen. He cooked up this Louisiana shrimp with crispy rice. It had chayote and okra kimchee under a lovely fried egg:


    And BellyQ's Chef Bill Kim brought down the hizouse with these coconut grits and pork shoulder (which melted in my mouth):



    Big smiles all around at the Pilot Light Chefs tent during my visit with Kendra, our Community Programs Manager! Thank you to everyone who came out the Fulton Market Harvest Festival this year - Proceeds are going straight to Pilot Light's awesome food education programs! Whoop!


    I met these lovely ladies from Flower for Dreams at the festival. I couldn't leave without one of their fresh bouquets... And yes, I sure did walk around the festival like Miss America!

    Set the Table 2017 | Week 38

    I loved having a "time out" and some freedom from meal planning last week. I actually cooked one more day than the last week. Not sure what I'm onto, but let's keep this going!

    How about this crazy awesome Food education lesson around pizza from Pilot Light Chefs!? What an amazing way to teach Common Core Curriculum through FOOD! I really enjoyed gathering downtown with other Advisory Board members on Thursday and had to share how we played with our pizzas. We made ours out of ricotta, parm, figs, basil, and prosciutto! We named it the Gy-eeza (A Gyro + pizza. Ha!) I've GOT to bring this home to my eaters!

    I'll be headed to the Fulton Market Harvest Festival next weekend (I cannot wait to have BRUNCH with Aaron Sanchez!!! Come join me at this event next Saturday morning and find other amazing foodie events here).

    Have you heard about the annual Pilot Light Chef's Feed Your Mind Gala on Nov 3rd? I'll be there too! Come join me at the table and let's raise the roof together for Chicagoland food education!





    Had a wonderful time with Willow Wood Preschool Play, Learn, Grow Event today with ambassador teammates Christina, Sara, and our kids! We taught around 75 kids and parents how to make their own honey mustard jam jar dressing. It's always amazing to see how the children of all ages will eat their vege with this awesome dip.

    Homemade Honey Mustard

    1 Tbsp dijon mustard
    1 Tbsp apple cider vinegar
    1 Tbsp honey
    2 Tbsp plain greek yogurt
    1 pinch salt

    Shake up in a small jam jar and enjoy with fresh cut vege. This is also a great recipe for a simple chicken and fish marinade! Add fresh garlic and herbs to make it your own!

    Chris found this special Lake County High School Sports Hall of Fame signed basketball covered in dust in my closet the other day. He surprised me and brought home this special glass case for it. I can't believe I'm old enough to be in a Hall of Fame. Sheesh.

    Don't blink and keep dribbling (just not with this ball).

    Aces Day at West Oak + Organic Plant Sale Weekend!

    It's been a week and I still can't stop smiling ear to ear! What an awesome day we had at West Oak School last Wednesday!

    I know I have thanked everyone, but I must do so again.

    Thank you Principle Chris Willeford - You said "Aces Day" and we said YES!

    Thank you Pilot Light Chefs - Alex, you and I have been dreaming for a long time and finally, FINALLY we were able to get your common core aligned food education out to the suburbs. I can't wait to do it again!

    Thank you Preferred Meals - Mary, it was wonderful having you in the lunchroom with us and the kids LOVED tricking out their tacos! Thank you for jumping into our hot food education balloon and Let's take it again up uP UP next year!

    Thank you Ambassador Sara Lohrman + Stevenson High School Food Revolution Club - I have never had so much fun speaking, teaching and working alongside a group of students! By the last lunch (there were four of them!) you all were making everything on your own and running the entire tasting line. BOOM.

    Thank you Chef Rob - Your presence, your wellness story and your sweet potato hummus rocked our worlds! I cannot wait to work with you again. What great energy we have together!

    Thank you Sue Kruckman - You deserve Wellness Chair + Nurse of the YEAR! Thank you for spear heading this day from the "inside". It could not have happened without your passion and organization. You are my school wellness hero.

    Last but not least, thank you Jamie's Food Revolution for inspiring us all to get food education back into our schools and to cook more from scratch at home together. We've been at it together for 4 years now and I love volunteering for this fantastic campaign.

    What a team effort! What a day! Every smile, every tally mark, every conversation was one.more.drop into the good food conversation. There were so many students who had never tried hummus, let alone sweet potatoes or a pesto. "What is cilantro? What is pesto? You can put that on your taco? WHAT!?" The "Tacos Al Pastor" lesson connected the students to their food, a tangible take away lesson with real world application. My "No Guts No Glory" presentation made them laugh and it made them think a little bit more about what is in their food + where their food is coming from. It linked our gut health to our mental and physical health and encouraged them to take ownership like an athlete takes charge of the game!!

    Chef Rob’s Sweet Potato Hummus
    1 cup Chickpeas (garbanzo beans)
    2 tablespoons extra virgin olive oil
    1 teaspoon Cumin
    1/2 teaspoon paprika
    1 1/2 teaspoon Sea or Kosher salt
    1 whole Sweet potato Roasted and Diced
    1/4 cup lime juice
    1/2 teaspoon Cayenne pepper (optional)

    Add all ingredients to a blender, food processor or nutribullet and blend! Feel free to use reserved garbanzo bean juice to thin out the hummus rather than add extra oil for a creamier consistency (thanks for the great tip Chef Rob!)

    Super Food Ambassador Lindsey’s Cilantro Pesto
    1 zucchini diced
    ¼ cup sunflower seeds
    1 bunch fresh cilantro (stems included)
    1 lemon juiced
    2-3 Tablespoon avocado oil OR extra virgin olive oil
    A healthy pinch of sea salt

    Add all ingredients to a blender, food processor or nutribullet and blend! Feel free to add more lemon juice or oil to get to your desired consistency.
